1x 400g can of chickpeas, or sprouted for better nutrition
NUTRITION INFO
2 zucchini grated or chopped
2 shallots chopped
¼ cup coriander chopped
2 tbsps mint chopped
1 tsp cumin
½ cup SR flour
½ cup mozzarella (if required)
1 egg
salt and pepper
1/4 cup vegetable oil
Mint Yoghurt
2 tsp mint
1 tbsp mint chopped
200g plain yoghurt
1 tsp castor sugar or stevia if you are a health nut. Like ME.
Mix chickpeas, zucchini, shallots, coriander, mint and cumin. Add flour, mozzarella and egg.
Season with salt and pepper.
Stir. Heat oil in pan.
Spoon the mix, using a tablespoon into pan to make fritters.
3 to 5 minutes till golden. Check firmness in centre.
Mint Yoghurt -
Mix together the dried and fresh mint with the yoghurt, sugar. Serve warm with yoghurt.
